keep in mind that the proofs have more backsweep, which means it's less stable at high speeds but it's apparently a very relaxed bends. i hear it's a love or hate thing

make sure when you want to lighten up your bike, you're replacing the parts that count - handlebars shouldn't be the first place to lighten up the bike.. tires, tubes, wheelset, fork... major components first.
what fork are you running? i'm pretty sure you can lose weight there first, it will make a much bigger difference than just losing 60-80g from the bar.

sick build. there's no need for the mint bars when you have the jalapenos. for tires, what do you ride and how long do you want your tires to last? if you ride dirt and you're not too worried about tread life, i'd suggest race kings. i'm running small blocks right now, i have race kings on the side
